Tasting Notes for the 2024 Sugaring Off

2024 has been a banner year for our small operation! If you have found this page, you’ve likely followed the QR Code at the bottom of your maple syrup bottle. Thank you for supporting our project!

#1: Apples & Ideas

  • Clean, buttery, light salt caramel, subtle wood finish

#2: Calypso

Sugar forward, mossy

#3: Dark Precursor

Smooth viscosity, melty, tastes brown

#4: Annealer

Tastes like a Crunchy Bar! Jelly belly popcorn

#5: Amplitudeau

Corn syrup consistency. Caramel

#6: Corégone

Light – thinner – reserved for project testing

#7: Overtone

Good balance. Normative

#8: Sylvain

Viscous. Even flavour from beginning to end. No aftertaste

#9: Unsettled

Honey, smoke

Woody, beautiful texture

Metallic. Thinner consistency. Butter in the middle

Dark wood start, subtle fadeaway. A bit thin

Very nice, rich and balanced

Envahissant, mouth-coating, decadent terroir

Vanilla, dried fruit, cream.

Blond wood, long resin finish

Lighter viscosity, balanced, round – flavour forward

Caramel, buttery, darker, bold. Sensual mouthfeel. Some crystallization

Punctual; even experience. Leather notes. Some crystallization

Delicate, round, refined. Some crystallization

Aromatic wood, smokey – tastes Iike a sauna, activates tastebuds on the sides of the tongue

Classic maple syrup, clean

Good for Saturday morning pancakes with the kids, easy-flowing easy-going

Font of the tongue; light touch

Wood fire, aftertaste of granite (or hot sand?) – Coraline V.

Nice unctuous oily quality; slowly dissolves off of the tongue

Long amber finish, sweeter, cotton candy, heavy crystallization

Light, broad taste; a little unfixed?

Batch 30 tasting notes from R (age 9) and A (age 5):

R: it reminded me of the time I had a maple syrup lollipop. 

A: it reminded me of all the sweets in the world, even ice cream.
